Edamame Salad

Ingredients:

  • 500g frozen edamame, shelled
  • 1 lemon, zested and juiced
  • 1/3 cup Nafsika’s Garden shredded Parmesan style cheese
  • 2 tbsp basil, chopped
  • Salt and pepper, to taste

Directions:

  1. Cook edamame beans according to package instructions.
  2. In a medium-sized bowl, add edamame, basil, lemon zest, lemon juice, salt, pepper, and mix. Sprinkle parmesan cheese and toss together until evenly coated.
  3. Enjoy as is or with some toasted baguette.
