Thinly slice the onions.

Make the caramelized onions: in a pan at low/medium heat, melt the coconut oil. Add the onion and cook for 10 minutes uncovered, lowering the heat if needed so it doesn’t bun. Stiff occasionally until the onion is golden, slightly brown. Sprinkle the sugar along with the pinch of salt & pepper and cook 2 more minutes. Add the balsamic vinegar, mix, cook one extra minute and remove from heat. Set aside.

Toast two slices of bread (or more depending on how many grilled cheeses you wanna make).

While the bread is toasting, finely slice the apple and preheat a pan over medium heat.

Spread vegan butter on both sides of the grilled toasts. Then put a slice of Nafsika’s Garden Smoked Gouda, spread a spoonful of caramelized onions, add a few slices of apple and place the second buttered toast on top.

Cook the grilled cheese: place the grilled cheese in the preheated pan. Lower the heat to low-medium and place a second pan over the grilled cheese to apply some weight over it and press it. Cook for about 3-4 minutes, while avoiding burning the grilled cheese, then flip and cook the other side. Remove from heat, cut in too and enjoy while it’s still warm!
