Ok, I have a secret. Sometimes I cheat. That is, I am constantly looking for super quick and easy ways to create a healthy recipe that needs as little time and work as possible from me, on those super busy days. I’ve created a recipe that until now, I’ve shared only with close friends, and I am now offering it to you. 🙂

Preheat the oven to 400 F.

In an oven dish, pour olive oil (EVOO) to cover the base, then add about 1 cup whole grain rice.

Season if you like, but not necessarily.

Cover rice completely with pre-boiled water.

Add in the veggie meatballs

Pour an entire 570 ml bottle of Tomato & Basil Sauce.

Cover and bake for 40 minutes.
