Ingredients:
• 1/2 cup walnuts, finely chopped
• 1 tbsp rosemary, finely chopped
• 2 tbsp scallions, finely chopped
• 2 tbsp parsley, chopped
• 2 tbsp olive oil
• 1/4 tsp salt
• 1/4 tsp freshly cracked pepper
• 10 ounces Medjool dates, pitted
• Nafsika’s Garden Feta style cheese
• Nafsika’s Garden Smoked Gouda style cheese, block
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Set aside.
2. In a small bowl, combine the finely chopped walnuts, rosemary, scallions, parsley,
olive oil, salt, and pepper. Mix well to ensure the flavours are fully combined, then
set aside.
3. Place the pitted dates on the prepared baking sheet. Using a knife, slice each date
along one side to create an opening for the filling.
4. Slice the feta and gouda cheeses into 1-inch pieces. Stuff each date with a slice of
cheese, alternating between the feta and smoked gouda for variety.
5. Top each date with about a teaspoon of the walnut-herb mixture you prepared
earlier.
6. Bake the dates for 15 minutes or until the walnut topping is golden and the dates
are warmed through.
7. Remove from the oven and let sit for 5 minutes to cool slightly before serving.
