Cheesy Mushroom Toast: A Savoury Delight for Any Occasion

Ingredients:

- 2 slices of a rustic loaf of bread

- 2 cups cremini mushrooms

- 1 shallot, sliced

- 3 tbsp olive oil

- 1/2 cup Nafsika’s Garden Mozza/Pizza shredded style cheese

- 2 tbsp Nafsika’s Garden Parmesan shredded style cheese

- 3 slices Nafsika’s Garden Smoked Gouda style cheese

- Pinch of fresh thyme

- Cracked black pepper

Instructions:

  1. Clean the mushrooms by wiping off any dirt with a paper towel or clean sponge. Cut into 1/2-inch-thick slices. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Once the oil is hot and simmering, add the sliced shallots and cook until they are translucent and soft.
  3. Add the sliced mushrooms to the pan, stirring occasionally, until they are tender and release their juices. Cook for about 8-10 minutes until brown, fragrant, and significantly reduced in size.
  4. While the mushrooms are cooking, toast your sliced bread. Set aside.
  5. Once the mushrooms are fully cooked, add all three cheeses to the pan, stirring well to distribute and melt the cheese evenly into the mushrooms. Cover the pan with a lid for a couple of minutes until the cheese has fully melted. 
  6. Give the mushroom and cheese mixture a good stir and scoop it onto your toasted bread. 
  7. Crack black pepper over the top, sprinkle with fresh thyme, and serve immediately.
  8. Enjoy
