Creamy Cauliflower Soup: A Comforting Bowl of Goodness

Ingredients:

- 1 large head of cauliflower, cut into florets

- 3 tbsp olive oil

- Ground pepper

- 1 head of garlic

- 1 medium yellow onion, diced

- 4 cups vegetable broth

- 1/2 tsp salt

- 1 cup Nafsika’s Garden Mozzarella shredded cheese style

- 2 slices Nafsika’s Garden Cheddar style

- Croutons, to garnish

Instructions:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.

  2. Place the cauliflower florets in a bowl, drizzle with 1-2 tablespoons of olive oil, add salt and black pepper. Toss to coat and spread evenly on the lined baking sheet.

  3. Remove the papery layers from the whole garlic head. Using a sharp knife, cut off the top of the garlic head so all the cloves are exposed. Place the garlic in a medium piece of foil, drizzle with olive oil, and loosely wrap it. Place the wrapped garlic on the baking sheet with the cauliflower.

  4. Roast the cauliflower and garlic for 30-35 minutes, flipping halfway through, until the cauliflower is golden and caramelized.

  5. While the cauliflower and garlic are roasting, heat 1 tablespoon of olive oil in a pot over medium heat. Add the diced onion and cook until it becomes translucent. Set aside.

  6. In a large blender, combine the cooked onion, roasted cauliflower, roasted garlic, vegetable broth, salt, and pepper. Blend until smooth and creamy.

  7. Pour the blended soup into the pot and bring it to a simmer over medium heat. Once simmering, stir in the Nafsika’s Garden Mozzarella and Cheddar style cheeses. Let it simmer for an additional 10-15 minutes until the cheese is fully melted and the soup is thick and creamy.

  8. Serve the soup with croutons and a sprinkle of mozzarella cheese on top.
