My Ingredient List

  • 1 pound of fingerling potatoes
  • 2 tablespoons of olive oil
  • 1 cup of Nafsika’s Garden shredded mozzarella cheese style
  • 1 container of Nafsika’s Garden plain Greek yogurt style
  • Salt and pepper to taste
  • 1/2 cup of sliced green onions

Instructions:

 

  1. Begin by scrubbing the potatoes under running water and drying them thoroughly with a towel.

  2. In a bowl, coat the potatoes with olive oil, ensuring they are evenly coated.

  3. Place the potatoes in an air fryer at 400 degrees F or in a preheated oven for 15-20 minutes, until they are crispy on the outside and tender on the inside.

  4. Remove the potatoes from the air fryer and, using a small spring knife, slice each potato halfway lengthwise. Give them a gentle squeeze to open them up.

  5. Fill the opening with shredded mozzarella cheese and quickly return them to the air fryer to melt the cheese perfectly.

  6. Once the cheese is melted, serve the potatoes immediately. Top each potato with a dollop of plain Greek yogurt and a sprinkle of sliced green onions. Season with salt and pepper to taste.
