Ingredients:

Cookies

1 3/4 cup all-purpose flour

1/2 tbsp cornstarch

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

1/8 tsp cinnamon

3/4 cup vegan butter

1/2 cup granulated sugar

3/4 cup brown sugar

1/3 cup apple sauce or dairy-free yogurt

2 tsp vanilla extract

1 cup vegan mini chocolate chips

Ricotta Filling

1 cup Nafsika’s Garden Ricotta Style Cheese

1/4 cup powdered sugar

1/4 cup mini chocolate chips

1/8 tsp cinnamon

Instructions:

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, cinnamon, and sea salt. Set aside.
  3. In a large bowl, cream together the vegan butter, granulated sugar, brown sugar, apple sauce, and vanilla extract until well combined. Gradually fold in the flour mixture until just incorporated, then gently fold in the vegan mini chocolate chips.
  4. In a small bowl, prepare the ricotta filling by combining the Nafsika’s Garden Ricotta Style Cheese, powdered sugar, mini chocolate chips, and cinnamon.
  5. Using a cookie scoop, portion out the cookie dough onto the prepared baking sheet. Using the back of a teaspoon, create a well in the centre of each cookie.
  6. Spoon a tablespoon of the ricotta filling into the centre well of each cookie.
  7. Chill the cookies in the refrigerator for 30 minutes while preheating the oven to 350 degrees F.
  8. Bake the cookies for 12-15 minutes, until the edges are golden and the centres are set but still soft.
  9. Remove from the oven and let cool for 15 minutes before dusting with powdered sugar.
