Ingredients:
- 1 container Nafsika’s Garden Ricotta style
- Zest of two lemons
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp cracked black pepper
- 4 tbsp Nafsika’s Garden Parmesan style block, grated
- Fresh basil
Instructions:
- In a large pot of boiling salted water, cook pasta according to package directions. Once pasta is 3/4 of the way cooked, remove and set aside one cup of pasta water to use for the sauce.
- To a blender, add ricotta cheese, lemon juice, salt, and pasta water, a little at a time. Blend until smooth, adjusting and adding more water if too thick.
- Pour the creamy ricotta sauce into a serving dish, add lemon zest, grated parmesan cheese, and pepper. Mix until combined, then add the drained pasta and toss until evenly coated. If too thick, add a little more pasta water.
- Top with more lemon zest, fresh basil, and cracked black pepper.
