Ingredients:
- 1 ciabatta baguette
- 1/2 cup pizza sauce
- 1/4 cup pesto
- 2 cups Nafsika’s Garden Mozzarella shredded cheese
- 3 tomatoes, sliced
- 6 tbsp Red pepper hot sauce
- 1 1/2 cups Spinach, chopped
- 4 tbsp Solon Extra Virgin Olive oil
- 2 tbsp Balsamic Vinegar
- Crumbled Nafsika’s Garden Feta cheese
Instructions:
- Preheat the oven to 350 degrees.
- Slice the baguette in half. On one half, spread pizza sauce, shredded cheese, and dollops of red pepper hot sauce.
- On the other half of the baguette, spread pesto, a sprinkle of shredded cheese, tomato slices, and crumbled feta.
- Place the prepared baguettes in a large pan and bake in the oven for about 15 minutes, or until the cheese is melted and golden.
- While the baguettes are baking, prepare the spinach salad in a bowl with chopped spinach, olive oil, balsamic vinegar, salt, and pepper to taste.
- Once the baguettes are ready, remove them from the oven. Serve the Pesto Pizza Baguette as is and top the other half with the spinach salad.
- Cut into pieces and serve while hot.
