Ingredients:

- 2 sweet potatoes, cut into cubes

- 1 can chickpeas, drained and patted dry

- 3 tbsp extra virgin olive oil

- 2 tbsp sesame seeds

- 2 tbsp poppy seeds

- 1 tsp chipotle chili powder

- 2 tsp smoked paprika

- 1 tsp onion powder

- Salt and pepper

- 5-6 cups shredded kale

- 1 avocado, cubed

- 1/4 cup pumpkin seeds

- 3/4 cup Nafsika’s Garden Feta style cheese, in cubes

Dressing:

- 1/3 cup olive oil

- 2 tbsp dijon mustard

- 3 tbsp maple syrup

- 2 tbsp tahini

- Half a lemon, juiced

- 2 tbsp apple cider vinegar

Instructions:

  1. Preheat oven to 425 degrees F. In a bowl, coat sweet potatoes with olive oil, onion powder, chipotle chili powder, salt, and pepper.
  2. In a separate bowl, coat chickpeas with olive oil, sesame seeds, poppy seeds, smoked paprika, onion powder, salt, and pepper.
  3. Spread sweet potato cubes and chickpeas on a parchment-lined baking sheet, ensuring they are in a single layer. Bake for 40 minutes, tossing halfway through, until crisp. Remove from oven and let cool.
