  • Ingredients:

    • 1 cup roasted beets
    • 1/3 cup Nafsika’s Garden Plain Greek Yogurt Style
    • 1/4 cup Nafsika’s Garden Ricotta Style
    • 2 tsp lemon zest
    • 1/2 pound Pasta Reggia Farfalle
    • 1 tsp garlic powder
    • 1 tsp Kalas Iodized Sea Salt
    • 1/2 tsp Ground black pepper
    • 1/8 cup Solon Extra Virgin Olive Oil
    • Nafsika’s Garden Feta Style cheese, as garnish
  • Instructions:

    • Fill a medium-sized pot with water and add salt. Once the water boils, add pasta and cook according to the packaging instructions.
    • In a blender, combine roasted beets, Greek yogurt, ricotta, lemon zest, olive oil,garlic powder, salt, and black pepper. Blend until smooth, adjusting the colour with additional beets or yogurt to achieve the desired pink hue. Adjust salt to taste and
      set aside.
    • Once the pasta is cooked, reserve 1/2 cup of pasta water and set it aside. Drain the pasta and add it to the serving dish.
    • Pour half of the pink sauce over the pasta along with 1/4 cup of pasta water. Mix until the pasta is thoroughly coated. Add more sauce and pasta water to reach your preferred consistency.
    • Serve the pasta with a delightful crumble of feta-style cheese and a sprinkle of sliced almonds.
