My Ingredient List

  • 1 sheet of store-bought vegan puff pastry
  • 2 tablespoons of sliced cherry tomatoes
  • 2 tablespoons of diced cremini mushrooms
  • 4 tablespoons of Nafsika’s Garden Shredded Mozza Pizza Cheese Style
  • 4 teaspoons of Nafsika’s Garden Parmesan Cheese Style
  • 2 garlic cloves, sliced
  • 4 teaspoons of chopped onions
  • Olive oil
  • 4 teaspoons of pesto
  • Fresh basil for garnish


    1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
    2. On a clean, lightly floured work surface, lay out the thawed puff pastry. Using a sharp knife or pastry wheel, cut the puff pastry into 4 even rectangles. Set them aside.
    3. Grate 1 teaspoon of Nafsika’s Garden Parmesan Cheese Style four times, evenly spacing them out on the prepared baking sheet.
    4. Place a tablespoon of sliced cherry tomatoes on top of two parmesan spots and a tablespoon of diced cremini mushrooms on top of the other two parmesan spots.
    5. Sprinkle some chopped onions and sliced garlic on top of all four spots. Add 1 teaspoon of pesto over each spot.
    6. Take the four puff pastry rectangles and place them on top of each of the four ingredient spots. Gently press the pastry around the filling to remove any air.
    7. Brush a little olive oil over the puff pastries and grate more Nafsika’s Garden Parmesan Cheese Style on top.
    8. Bake in the preheated oven for 10-12 minutes, or until the puff pastry has risen and turned golden.
    9. Remove the puff pastries from the oven and, using a spatula, carefully flip them over.
    10. Garnish with fresh basil, and your cheesy upside down puff pastries are ready to be enjoyed!
