Ingredients:

  • 1 cup frozen spinach
  • 1 onion, diced
  • 1 garlic clove, minced
  • Nafsika’s Garden Feta style, crumbled
  • Nafsika’s Garden Ricotta style
  • 2 tbsp Solon Extra Virgin Olive Oil
  • Puff pastry
  • 1 tsp Kalas iodized sea salt
  • 1/2 tsp ground pepper
  • 2 tbsp plain almond milk
  • 1 tsp maple syrup

Instructions:

  1. Preheat Oven: Begin your festive journey by preheating the oven to 400 degrees F, setting the stage for the creation of culinary magic.
  2. Thaw and Squeeze: Thaw the frozen spinach, squeezing out excess water to ensure the perfect texture for your wreaths.
  3. Sauté Aromatics: In a pan, sauté diced onions and garlic in Solon Extra Virgin Olive Oil until fragrant and translucent.
  4. Combine Ingredients: In a medium-sized bowl, combine the crumbled Feta, Ricotta, olive oil, salt, and pepper, creating the heart of your wreaths.
  5. Mix in Spinach: Introduce the cooled spinach mixture to the velvety base, ensuring every element harmonizes seamlessly.
  6. Prepare Puff Pastry: Unfold the puff pastry, generously spread the spinach-feta mixture, and roll the dough into a log, creating a visually stunning crisscross braid.
  7. Seal and Refrigerate: Seal the edges with a touch of magic, refrigerating the wreaths briefly to firm up and hold their festive shape.
  8. Almond Milk and Maple Syrup: Before they take centre stage in the oven, delicately brush the wreaths with a mixture of almond milk and maple syrup for a hint of sweetness.
  9. Bake to Perfection: Bake the wreaths for 25-30 minutes or until golden brown, filling your kitchen with the irresistible aroma of Christmas joy.
  10. Serve and Enjoy: Remove from the oven, let cool for 5 minutes, and serve warm or cold. Each bite is a celebration of the season’s joy and the magic of plant-based indulgence.

Celebrate the season with our Festive Spinach and Feta Wreaths – it’s not just a dish; it’s a Christmas experience.
