Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a sheet pan with parchment paper.
  2. In a small bowl, add diced cucumbers, red onions, and tomatoes. Squeeze half a lime over the top, and add a pinch of salt. Stir everything together, and set the bowl aside. If you like things spicy, feel free to add some diced jalapeños to the mix! In another bowl, mash one avocado with a fork. Add a pinch of salt and squeeze the other half of the lime over the top. Stir everything together, and set the bowl aside.
  3. Transfer 4 cups of tortilla chips to the lined sheet pan and add Nafsika’s Garden Mozza-Pizza style shredded cheese on top. Heat the sheet pan in the preheated oven for 5 minutes or until the cheese is melted and the chips are golden.
  4. While the chips are in the oven, add 1 can of drained black beans into a saucepan over medium heat. Add 1 tbsp of olive oil, 1/2 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp onion powder, and 1 tsp chili flakes. Allow the beans to heat up and cook for about 5 minutes until hot. Remove from heat and set the saucepan aside.
  5. Take the sheet pan out of the oven, and add the cooked black beans, the mixed vegetables, 4 tbsp of chunky salsa, the mashed avocado, and finally 5 dollops of Nafsika’s Garden Plain Greek Yogurt style.
