These mini vegan banana bread loaves are the perfect dessert! Now you can try them too. Best when warmed up!

Ingredients

  • 2 ripe bananas

  • 1/4 cup dairy-free yogurt (I used cashew)

  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)

  • 1/3 cup liquid coconut oil

  • 2 tablespoons maple syrup

  • 1/3 cup creamy nut or seed butter

  • 1/2 cup non-dairy milk

  • 1 teaspoon vanilla extract

  • 1.5 cups oat flour (made from Rolled Oats or use spelt flour)

  • 1/2 cup Rolled Oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1/3 cup dark chocolate chips or chunks

Method

  1. Preheat oven to 350 degrees and grease a mini loaf pan with coconut oil

  2. Mash the bananas in a large bowl then add yogurt, flax egg, coconut oil, maple syrup, vanilla extract, nut butter and milk and mix until creamy

  3. Add in the oat flour, oats, baking powder and cinnamon and mix well

  4. Fold in dark chocolate then add to each loaf pan and bake in oven for about 12-15 minutes or until ready
